The best thing about these tacos is how delicious they taste. The second best thing about these tacos is that they cook slowly throughout the day in a slow cooker or crockpot, making it a simple and easy meal to make on a weeknight.
You'll need to plan ahead since the pork does require about 8 hours of cooking, but the longer cooking time will result in a deliciously rich flavor that's worth the wait.
Ingredients:
- 1 white onion
- 4 cloves of garlic
- 12 ounces of pale ale beer
- 2.5 pounds of pork shoulder
- 2 oranges (save peel)
- 2 limes
- 2 avocados
- 2 tsp red chili powder
- 1.5 tbsps cumin
- 3 tsp paprika
- 6-8 oz. soft goat cheese
- cilantro
- corn tortillas
- Avocado oil for frying the carnitas
Olive Oils:
- 2 TBSP Jalapeno Olive Oil
- 1 TBSP Oregano Oil
- Garlic Cilantro Balsamic
- Season pork shoulder with spices (salt, pepper, chili powder, paprika, and cumin)
- Toss all ingredients, including the pork, into a crockpot.
- Simmer on low for 8 hours
- Remove pork shoulder and shred into bite-size pieces
- Place 2 TBSP of avocado oil into a frying pan on medium-high heat. Fry carnitas for 1 minute on each side until crispy (*careful not to fry them for too long or they'll get dry).
- Construct your taco and drizzle the garlic cilantro balsamic and jalapeno olive oil to taste.
