This summer salad has all the fixings - fruit for sweetness, nuts for texture and goat cheese to add an earthy flavor. Bring this as an appetizer or side dish to your next potluck or BBQ this season. Double the recipe for larger gatherings and I guarantee you won't come home with any leftover.
Ingredients:
- 4-5 cups of spinach
- 1/2 one large red onion
- 1 cup blueberries
- 1 cup diced up strawberries
- 1/2 cup crumbled goat cheese
- 1/4 pumpkin seeds
- 1/4 cup crushed walnuts
Dressing:
- Basil Infused Olive Oil
- Lemon Balsamic
- Season with a pinch of salt and pepper
Directions:
- Toss all salad ingredients together with the dressing
- Taste and season with more salt and pepper if necessary
Serves: 4-6 people
