Meat Loaf with Balsamic Glaze

This is an amazing recipe that my mother got from her friend. I know the sound of meatloaf turns some people off, but give this recipe a try and I promise you and your guests won't be disappointed. It is pure comfort all the way!

Meatloaf:
1/2 tbsp olive oil
1/2 Cup minced yellow onion
1/4 Cup grated carrot
3 minced garlic cloves
SAUTE ALL OF THE ABOVE UNTIL TENDER

1 LB. ground beef
1 LB. ground pork
1/2 tsp red chili flakes
1 tbsp minced parsely
1/2 tsp salt
1/4 tsp pepper
1 egg
1/2 Cup bread crumbs

Combine above ingredients with sauteed mixture and bake 45 minutes @325 degrees.

Glaze:
1/4 Cup brewed coffee
1/4 Cup bourbon or wiskey
1/4 Cup brown sugar
1/8 Cup soy sauce
HEAT ABOVE IN SAUCE PAN UNTIL REDUCED BY HALF,  then add:

1/4 Cup ketchup

3 tbsp Traditional Aged Balsamic Vinegar or any other flavor aged balsamic

1 tbsp Worcestershire sauce


After baking meatloaf 45 minutes, liberally brush glaze and
bake another 15 minutes.  Remove from oven and let stand 10 minutes before slicing.  Serve with mashed potatoes.
